Oatmeal Raisin Cookies (That Don't Suck)

A perfectly chewy oatmeal raisin cookie (that doesn't suck) is a thing of beauty. Raisins soaked overnight, coupled with 24 hours in the fridge to let the grains hydrate and a stint in the freezer to help the cookies keep their shape all go into making each bite a treat.

Don't be scared off by the time commitment! Since these freeze really well, I like to make a double batch at a time and bake as needed. For an extra treat, try soaking the raisins in butterscotch schnapps!

Jump to Recipe

There are two kinds of people in this world - the kind who see an oatmeal cookie and groan, or the kind that see one and immediately want it. This gets even more divisive when the cookie has "bits" in it. I know I'm not the only one who eagerly bit into an oatmeal chocolate chip cookie and was immediately confronted with burnt, crunchy raisins!

That said, oatmeal raisin cookies can and should be delicious - with the right treatment. I have a few oatmeal cookie lovers in my life, and since I'm putting together Christmas care packages I knew these would be one of the offerings I'd include. I settled on a tried and true recipe from Elise at Simply Recipes as my base, and (as I am want to do) made a few tweaks to suit the people I'd be giving the cookies to as well as what I had on hand.

Perfecting the bake on these was the difficult part - freshly made dough led to insane spread on the cookie sheet, burning on the edges while still remaining raw in the middle. Refrigerating it helped the spread a bit, but we still had the raw middle issue. Finally, I froze the scooped cookie dough, then baked it at a lower temperature for a bit longer.

That last step was magic - problem solved! The cookies still spread a little bit, but they don't burn, and while the centres still look gooey when they come out of the oven, once cooled they are perfectly baked. The results are chewy, sturdy enough to pack, and full of toasted oat flavour and pops of plump raisins. They're as good as the ones I remember from the cookie factory by my grandparents' house growing up, and a lot easier to obtain.

Honey Gingerbread Cookies

It's never too early for gingerbread cookies, especially when it's the special request of a certain 5 year old! These soft and chewy cookies are made with brown sugar and honey with a hit of warm spices from @selefina.spices . Glazed with a simple icing sugar mix and topped with as many sprinkles as you like, they're a great after school snack.

Jump to Recipe

My niece and I love to get into the kitchen and bake once a week or so, and with the holidays fast approaching she has been asking for gingerbread. For the first time in probably a decade, I did not have any molasses on hand, so I took a leap and decided to try swapping honey in for it instead. The honey swap served two purposes - one, it was a liquid sweetener, so the properties of a liquid sweetener stayed the same (read: soft and tender cookies) and two, honey is sweeter than molasses so it made the cookies a little less bitter and spicy than standard gingerbread.

Speaking of spices, I had access to some super-fresh, fragrant ones from Selefina Spices - including whole nutmeg. My niece got to smell what they really are supposed to smell like, compared to the spices we have in the pantry which are maybe a year or two old, if not older. The learning continued with the exploration of what nutmeg is and what it looks like inside, which is honestly such a beautiful picture:

Ever wondered where nutmeg comes from? It's actually a seed from an evergreen tree called Myristica fragrans! Whole, nutmeg is pretty boring in appearance - it looks like a small Walnut- but once you grate into  it a beautiful pattern emerges! My niece says it looks like a brain! Thank you again to Selefina Spices for this beautiful spice!

Making the dough was also a learning experience in measuring by weight, how flaxseed soaks up water, and how butter beaten with sugar can turn it into something really fluffy. The hardest part was waiting for them to cool enough to glaze and decorate - the above cookies got the liberal sprinkle treatment from the 5 year old, and more than a handful of sprinkles disappeared into her mouth in the process!

Even if you aren't making these as a teachable moment, you can't go wrong with these cookies - they are tender, chewy and just spicy enough, and are just as good plain as they are decorated in the manner of your choosing. They also hold their shape beautifully when baking, which is a huge perk if you're going for presentation!

Brownie Spiders

A simple two bite brownie base makes for the most adorable Halloween treat! My niece and I made these for her to enjoy this Halloween, they are easy and fun for little ones to participate in!

Jump to Recipe

Since the climax of Spooky Season is almost upon us, it was only fitting that I get into the kitchen with my 5 year old niece to create something perfect for the season! The little loves chocolate anything, so when I saw a photo of spiders made out of storebought 2-bite brownies and pretzels I thought it would be a great activity, especially if we made the brownies from scratch. Armed with measuring spoons and a keen eye on my food scale, I pretty much let her go to work, only taking over for the "hot" parts like putting the pan in the oven and taking the big ceramic bowl out of the microwave.

Just like when I taught Home Economics, the act of putting together the recipe was only part of the lesson. Having already broken the pretzels into "leggy" bits, she busied herself with sorting piles of 8 - because, as she proudly declared: "you know spiders have 8 legs". When telling her about baking powder's function (she was fascinated that these puffed up like mini mushroom clouds in their tins) we got into a discussion about pressure release, leading into volcanoes. It's never a dull moment when she's around!

As far as assembly goes, I actually suggest going with pretzel sticks if you can find them, rather than the knot-style ones, and the thinner the better. A 2-bite brownie does not offer a lot of real estate to attach legs to! If you can't get the candy eyes (or, like me, if you run out of them), use mini M&Ms, Reeses Pieces, or chocolate chips!

Two Bite Confetti Cake Cookies

Two bite cookies are the perfect snack, and when they taste like confetti cake *and* have added protein and fibre in them, there is no excuse not to indulge!

Jump to Recipe

It's definitely a month of celebrations around here - the end of school for the littles at home, graduation for my past class of grade 8's, Pride month and the end of exams hearkening the halfway point of my last term of college. I always love to bring some dessert to the celebration atmosphere, and cookies win out due to their portability and never-ending variability.

Given that we're still pretty busy these days, I wanted to put together a batch of cookies that were a bit more power-packed than usual, while still keeping the taste of dessert. When I saw this recipe I was sold - confetti cake in cookie form, with a protein boost? Heck yes. I made these cookies vegan and gluten free to serve the allergic amongst me, and the combination of Naked Shake's vanilla flavour and Naked Rice protein powder worked perfectly - slightly sweet, very vanilla-y with no grit. Sprinkles were added with abandon, because you can never have enough sprinkles!

Red Velvet Shortbread

I can never say no to red velvet anything - and these cut out cookies have all the flavour of the cake in a portable form! The vibrant colour and burst of flavour comes from Lorann Oils Red Velvet Emulsion, coupled with the tang from vegan cream cheese and a dash of red wine vinegar.

Jump to Recipe

In the four weeks spanning between my mom's birthday and my sister's birthday, we do a lot of red velvet. And by we, I (of course) mean me! It's really hard to beat the complex flavour that goes into a well made red velvet cake, but I've had success with cookies in the past and decided to try my hand at a type of shortbread. These cookies are tender but not chewy, and have the perfect amount of tang which is something that can be hard to find with these bakes. The colour (and some of the flavour) comes from my favourite "cheat" product, an emulsion-style flavouring for baking from Lorann Oils. It's dark red and smells like red velvet cake batter (and stains everything, so be warned).

I was actually pleasantly surprised with the texture of these cookies, given that I used a mix of fats, including a melted fat, melted chocolate and no eggs. I'm used to shortbread as a 4 ingredient, butter forward kind of cookie, but I (and my family) enjoyed these just as much. I was feeling fancy this week, so I decided to keep these cookies red carpet worthy with gold sanding sugar, nonpareils and silver stars. I'm not a fan of royal icing (and who has that kind of time these days?) so the sprinkles were a quick and easy fix that even my finicky niece liked.

That said - if you don't like sprinkles, they're great as is, with royal icing, or made into decadent sandwiches with cream cheese frosting! Hear me out - cream cheese frosting sandwiches with these, frozen, are the ice cream sandwich you didn't know you needed. Yes, it's decadent, but who needs an excuse to indulge now and then?

Note: I have made these with vegan butter (Earth Balance and Becel sticks) and vegan cream cheese (Follow Your Heart) and it worked beautifully!

Condensed Milk Cookie Bars

These Condensed Milk Cookie Bars are rich, tender and full of vanilla flavour from @nakednutrition #nakedshake Vanilla. Condensed milk creates almost a caramel note during baking (yes please!) and adds to the chew, while a combination of low gluten flours keeps everything melt in your mouth.

They also get a dose of fibre from #nakedfiber along with all the butter and chocolate!

Well, school is back in full swing (as if you couldn't tell - I know my posts have been spotty!) and with midterms coming up, let's just say the amount of comfort food needed around here has increased. I've been spending a lot of my free time in the kitchen stress-baking, but since I share my creations with people who have other health and fitness goals I have been trying to be cognizant of that fact, making treats that are both delicious and functional. After making countless batches of these brownies and these cookies (with added protein powder) for my sister, I figured it was time to switch things up a bit and use up some pantry staples that were kicking around. Luckily, the lovely folks at Naked Nutrition had just sent me their vanilla flavour to sample (can you tell that I love these shakes?) and I couldn't wait to add it for some extra oomph.

Like the other Naked Shake products I've reviewed (and baked with) on here, the vegan Vanilla Naked Shake starts with a great tasting pea protein, with the addition of MCT oil, coconut sugar, and natural  flavors. A serving (2 scoops) contains 120 calories, 1.5g of fat, 20g of protein and only 5g of sugar. My sister was actually the one to try this first, mixing it into orange juice for a creamsicle shake. I'm a coffee fiend so this blended with iced coffee would be a perfect pick me up too - when I'm not baking it into cookies and bars that is!

Hot Cocoa Protein Cookies

Is there anything better than hot cocoa on a winter day? These Hot Cocoa Protein Cookies have all the flavour of my favourite drink (thanks to Naked Nutrition's Hot Cocoa Protein Powder) but are easier to share - that is, if you let anyone!

Jump to Recipe

Okay, I know I said in my last post that my Chocolate Cherry Panettone with Almonds would be my last post of 2021, but I apparently don't do well with downtime over the holidays! Since the Marbled Peanut Butter Biscotti was such a hit at Christmas, my sister asked me if I could make her some chocolate cookies with the Naked Shake that I had, and since I didn't have anywhere to go and the kitchen was free today (yay!) it was the perfect opportunity to get baking. I started off with a mini-batch of Gosh Darn Good Cookies using coffee concentrate, and while that chilled I started this dough inspired by All Things Mamma.

What I love about this cookie is how easy it is. I did it all in a bowl with a fork and spatula, it only needed an hour in the fridge and the batch made 25 perfectly portioned cookies - more than enough to satisfy the chocolate hounds here! I decided to up the chocolateyness (yes, that is a word) of the recipe with dark chocolate miniatures instead of Hershey's Kisses, which we aren't a fan of. The minis melted beautifully due to their thinness, and added that bitter edge to an otherwise sweet cookie. I'd imagine couverture discs would be lovely here as well!

Have a sweet New Year everyone!

Marbled Peanut Butter Biscotti

Marbled Peanut Butter Biscotti is the perfect melding of two vegan doughs: one made with @pbfit and one with the rich flavours of @nakednutrition Hot Cocoa Naked Shake. Great on their own, or dipped in dark chocolate for an extra layer of decadence!

Jump to Recipe

Whew, what a December! Now that things are relatively settled (I hope) and exams are done, I've had time to bake for the holidays! Like last year, I kept things really scaled back since we aren't having the gaggle we normally do here (and without me working, my coworker gift list is non-existent). I did, of course, have to make at least one batch of biscotti and after receiving a tub of Naked Nutrition's Naked Shake in Hot Cocoa flavour I knew I had to use it somehow.

For me there is no better flavour combination than peanut butter and chocolate, so that was an easy pick! I don't often have a jar of peanut butter around, but I did have some powdered peanut butter from PBFit and used that. When I opened the lid on the Naked Shake, I was blown away by how good it smelled - think the richest brownie batter with a hint of milk (a feat for a vegan powder, but then again every single product I've received from Naked Nutrition has been beyond delicious). A serving is only 130 calories, but it packs 20g of protein - and let me tell you, mixing the powder with a bit of cold water before adding some boiling water makes a pretty rich hot cocoa!

The dough for this biscotti requires two separate preparations and some finessing to shape the logs (wet hands really help) but boy is it worth it! While most of the finished biscotti were wrapped for gifts, the ends of the logs became snacks that were a welcome addition to the holiday bustle here at home!

Peanut Butter Blueberry Cookies

These cookies are boosted with Naked Shake Peanut Butter Blueberry powder and made with peanut flour - lightly sweet and melt in your mouth with a hint of fruit!

I'm a peanut butter fan (as if you couldn't tell!) and my mom and grandma used to make those standard three ingredient, cross-hatched cookies on the regular when I was a kid. They're a classic for a reason - perfectly sweet and the right size for little (or big) hands! Looking at my pantry staples the other day, I wondered if I could use the powdered peanut butter and peanut butter blueberry shake powders I had to recreate my childhood favourites, and I have to say it worked out perfectly!

Because these are powders and not a creamy spread we're dealing with, you do need to add some moisture in the form of oil and a good binder like flaxseed (you can use an egg, however I would toggle the dry mix to account for the extra liquid). Otherwise it is a simple mix, wait, bake technique! The blueberry powder in the Naked Shake lets the baked cookies taste a little bit like a peanut butter and jam sandwich, though I would absolutely up the ante and make these sandwich cookies with jam if I was serving to company (and not transporting - like your normal PB cookies, these are tender and crumbly!). I gave a bag of these to TurkeyBoots who was passing through town on a road trip, and they apparently disappeared before they left the province!

Sweet Potato Cranberry Spice Cookies

These little Sweet Potato Cranberry Spice Cookies are gluten free and vegan but full of flavour from homemade pumpkin pie spice! The recipe makes a big batch of dough which is perfect for freezing ahead - thaw and bake whenever the craving strikes!

I'm going to start this off by saying... I know. It's not fall, its 30C and sunny outside, people are lounging around eating watermelon and ice cream. Most people are not cranking up their oven for anything.

But I'm not most people! I love the flavours of spice and fall, and baking is something I will do no matter the weather (unless out AC goes out in the middle of summer, which has happened!). So when I was playing around last summer to come up with holiday cookies, I came across some pumpkin cookies that looked like a hit for me and a few of my gluten free friends. However, because it was the middle of summer, canned pumpkin wasn't overly available. Sweet potatoes, on the other hand, were - and I actually much prefer the flavour over pumpkin. With the spices, the bit of richness from the brown sugar blend and the dash of maple extract, the dough smelled amazing, and the craisins I tossed in added the tiniest bit of tang and fruity flavour. Being gluten free, nut free and vegan, they were also a hit with the kids I taught and safe for the school environment (they would be great for camp too!).

Chocolate Centred Wowbutter Wafers

These rich and nutty cookies are completely #peanutfree - surprise! They get their flavour from a dose of @wow_butter and the sweetness is offset by a bittersweet chocolate centre.

I'm going to admit it, I made these cookies ages ago - like 2019 ages ago. 2020 was a total writeoff year, as was most of this year - so I'm getting around to my ye olde posts!

At any rate, these cookies are the quintessential combination of perfection for me - nuttiness, sweetness and chocolate all in a chewy bite. Because these are so simple though, the quality of ingredients - particularly the chocolate - is paramount! I used WowButter to make these nut free for guests, but you can use any nut or seed spread you wish! Store in an airtight container up to a week (if they last that long, that is!).

Better-for-You Deep Chocolate Brownies

You never need an excuse for brownies, and these ones are no exception! Dense, fudgy and perfectly sweet, they are also packed with protein, calcium and whole grains - all for under 150 calories a piece!

One of the many casualties of the pandemic - at least near me - was a low fat brownie mix that was an absolute lifesaver when I was losing weight in my teens and later as a poor college student. It was great - just add water and bake - and was rich enough to kill off a craving without resorting to added frosting or ice cream. Now that my sister (who is a chocoholic like me) is back at work and looking for healthier snack options that would also keep her going, I started looking around to see if there was a way to make brownies that were a bit better nutritionally than the usual bakery kind. After a bit of research and modifications, including adding Naked Collagen and a vegan chocolate protein powder to the dry mixture, I had a working formula.

Needless to say, these were an absolute hit for the fudgy / chewy crowd here. The use of honey keeps these moist and dense for days (and not to negate their health but they make excellent "sandwich cookies" for ice cream) while the Greek yogurt adds just a touch of tang. To top it off, just enough chocolate chips stud the batter and crust of these beauties to accent the rich cocoa flavour and the tiniest hint of coffee. The brownies also happen to be gluten free thanks to the oat flour, but since sis doesn't need to keep GF I'd easily swap in whole wheat pastry flour in the future. The worst part is waiting for them to cool and chill - but I promise the payoff is worth it!

Ruby Rhubarb Bars

These nondescript looking Ruby Rhubarb Bars hide a ton of fresh spring flavor- from the dash of local honey to backyard rhubarb and fruity ruby chocolate. Eaten alone or next to ice cream, they're an excellent addition to your Father's Day or summer picnic basket.

There are few guarantees in this world, but one thing I can always count on happening is my absolute monster of a rhubarb plant coming up every year. I've had it for 13 years now and even when we've had ice storms that killed huge trees that thing just keeps coming back. I admire it's tenacity to be honest. Luckily, rhubarb is one of those vegetables that pairs well with others and is incredibly versatile, so it very rarely goes to waste.

One of my colleagues is a verifiable rhubarb fanatic and requests rhubarb "things" every spring, from pie to compote. This year I decided to up the ante with an extra treat perfect for backyard bbqs and picnics - bar cookies. Much like blondies in nature, these brown sugar bars are chewy, rich and a nice break from dark chocolate (wait, did I say that?). For a twist though, the batter is studded with diced rhubarb and one of my new favourite "alternate" chocolates - ruby chocolate. This variety is a beautiful pink colour and has prominent fruity, almost tart notes to it. In fact, it really is not unlike strawberries in colour and flavour, so it is a natural to add to these bars! It's also a chocolate type that is gaining more popularity, and therefore availability, but if you don't have it on hand I'd suggest white chocolate instead.

The true test is to let these chill right down before digging in - I know, it's torture, but it is worth it, especially paired with a simple ice cream for dessert.

Honey-Oat Granola Bars

Who doesn't love a chewy granola bar? These are made with a mixture of oats, local honey, coconut oil and a couple scoops of @nakednutrition Naked Shake Peanut Butter Blueberry powder. Baked in a loaf pan, the bars are the perfect snack size - chocolate drizzle is optional (I guess!).

Summer is (almost) here, and with the end of school comes the hordes of kids (and adults) who are seemingly always starving. When I worked summer camp, we knew that aside from frequent water and shade breaks, the campers would be craving energy boosts to keep up with all the activities they were doing. Apart from fruit (which is great, but needs to be kept cool), we went through a lot of granola bars. It's easy to see why - they're convenient, portable, individually wrapped, high energy and kid-sized. Field trip purchasing runs involved an embarrassing amount of boxes of the snacks!

That said, buying all those boxes is expensive - not to mention some bars are essentially candy with a health halo attached. Luckily, not only are home-made granola bars easy to make, you can get the kids involved with mixing and you can add anything your heart desires to the mixture - my Home Economics students decided that dried apples, cherries, chocolate chips and banana chips were top contenders, while I opted to keep the base "bit" free and instead added flavour and nutrition with a healthy dose of Naked Shake Peanut Butter Blueberry powder and Naked Rice protein powder. I drizzled each bar with dark chocolate for no other reason than I could, so why not?

Once the bars are cooled, you can wrap them individually for travel and keep them on the counter for a week or so, or freeze them. Of course, if you're just enjoying them at home you can keep them in a covered container for the same amount of time, or freeze. Here's to a summer of beginning adventures!

Blueberry Chocolate Chip Cookies with Naked Shake

These two bite cookies are tender, ever so slightly chewy morsels packed with the rich flavor of @nakednutrition Naked Shake Peanut Butter Blueberry. Bursts of dried blueberries and chopped dark chocolate add texture and a fun twist on tradition too.

I love pretty much everything about cookies - they are fast to make (usually), portable, and open to pretty much every variable under the sun. If one type of cookie isn't your thing, there are probably at least 20 that are. The variability that a simple recipe - say, a classic chocolate chip - has affords a whole world of possibilities for not only flavour, but texture and nutrition. It was in that vein that I decided to take a simple, two-bite chocolate chip cookie recipe and turn it into a snack that was a great medley of sweet, fruity and nutty. I was inspired by the jar of Peanut Butter Blueberry Naked Shake sitting on my countertop, freshly opened after I had made myself a sample with cashew milk and discovered it tasted like a PB&J without the bread. I had dried blueberries on hand and a bar of dark chocolate, so along with the shake powder these cookies packed a punch of flavour!

I am so fortunate to be partnering with Naked Nutrition once again. You may remember them from my posts using their Naked Collagen and Naked Rice protein powders - two products which regularly make their way into my baking and eating routine - and this time they've come up with an innovative, gluten-free, soy-free and vegan protein shake powder made with fruit juice, MCT oil and no artificial sweeteners or flavours. One serving (5.8 tbsp or 2 scoops) 20g of protein and only 5g of sugar wrapped up in 140 calories and 2.5 grams of fat. Their blend uses non-GMO pea protein, which I found paired extremely well with the nutty peanut powder in the flavour I chose. I obviously used the Peanut Butter Blueberry flavour (what can I say, I love my peanut butter!) but they also have a strawberry-banana flavour as well. The powder is on sale now with a suggested retail price of $39.99 US - a deal since a little goes a long way!

Butter Pecan Thumbprints

These Butter Pecan Thumbprints were the perfect treat for my grandma's (low key) 85th birthday and were super simple to make thanks to a cake mix and the super flavorful @croftersorganic Wild Blueberry Spread. The spread has a great texture and a fresh flavour that isn't as sweet as regular jam.

Now that the end is in sight for my university courses, I've had the opportunity to clear out my pantry and try some things out that I didn't have time for the last few months. I stocked up on quite a few "shortcut" mixes for baking last year, one including a Butter Pecan cake mix that I intended to use as the base for N's Nana Cake on his birthday but promptly forgot about. That said, we don't let things go to waste here, and when Crofter's sent me a huge jar of their Wild Blueberry Spread I immediately thought about converting the cake mix into thumbprint cookies.

Thumbprints have a long history in my family - I can remember many a bake sale, Christmas and Easter where these cookies would be laid out with their arrays of colourful fruit fillings. That said, most of the "cookie" portion of those treats was rather... boring. A relatively standard sugar cookie dough, not offensive but not spectacular either. Call me weird, but those are my least favourite cookie doughs. Give me something with flavour and texture that compliments the other ingredients! Since Crofter's sent me blueberry spread that tasted more like the fruit and not sugar (as can be the case with other jams), I wanted something rich and warm to compliment it. Spotting the cake mix gave me an instant idea, because not only does it have the rich nutty flavours built into the mix but a cookie dough can hold onto other tweaks (like adding ground pecans and nutmeg to the batter, which I did here). All I can say is once the cookies cool enough to handle and eat (a surprisingly long time given the fruit filling), the combination of aromas are beyond indulgent. If mom hadn't come across the rest of the jar and started using it daily on toast (including a bread I made with the jam baked in), I'd be picking up another cheap mix to try other flavour combos!

If you don't know the Crofter's brand of jams and fruit spreads, let me tell you - they are worth seeking out. Normally I see "normal sized" jars of their spreads in the grocery store, but they emailed to let me know that starting this month Costco is stocking HUGE 660mL jars of certain spreads, which is fantastic given the need for more packed lunches these days. Crofter's is a Canadian brand which is still family run, a rarity these days, and they seek Canadian fruit to make their products. The blueberries in the jar I got were all Quebec harvested and there were enough left whole to really hammer home the "fruity" nature of the spread. Crofter's Wild Blueberry Premium Spread also has 1/3 less sugar than regular jams, while adhering to USDA Organic and Non-GMO Project standards. With organic cane sugar and no HFCS it is also a sweet treat that you can feel better indulging in at breakfast.

Saffron and Orange Cookies

Have a happy holiday with these two bite Orange and Saffron Cookies. Soft and full of exotic flavour from blood orange zest, saffron and orange flower water, they'll be a real treat even after the holidays are over!

I hope everyone had a fantastic holiday season (and are continuing to do so if you're still off of work and school!). No matter how long or short the actual holidays seem to be, the ghosts of cookies past seem to remain prevalent on the table for most of January simply because I (and mom) make so many kinds. These cookies were a sleeper hit over Christmas 2019, so even though last year's celebrations were tiny I made sure to whip up a batch for doorstep delivery.

We always have multiple varieties of oranges around the house in the wintertime, but by far blood oranges are my favourite. There is something about that shockingly garnet hue they have! Their Spanish origin (and my general love of falling into rabbit holes about cuisines) led me to a random recipe from Midwest Living that I just had to try out - with a few changes of course. I love the texture cream cheese lends to cookies along with the slight tang, and paired with the sweet-tart orange juice, saffron and orange flower water my kitchen smelled nothing short of heavenly. The oat flour addition (the first time around) came out of desperation - I ran out of all purpose - but I have to say it made the cookies have the perfect texture and just a tiny hint of flavour. When I made the batch again, I added it as well because, why not?

One of my favourite things about these cookies is that they pack a ton of flavour into a two-bite drop. The batch only makes about two dozen, but you won't feel the need to eat them by the handful - one or two will do (especially with tea - they are SO NICE with tea). You can also roll the dough into a log and slice it before stamping or docking it, or scoop all the cookies and freeze so you can only bake off what you need. They do keep quite a while though - not that they'll last too long anyway!

Here's to a wonderful new year!
