Today's going to be ever-so-slightly breaking away from the "bad" Holiday food that will undoubtedly be popping up over this (and many other) blogs this month. Okay, so these cookies are not exactly on Santa's "nice" list either, with a cup of sugar in them, but they are almost fat-free and rich in antioxidants from the cocoa powder! These are also good for holiday gifting too, especially if you know a lactose-intolerant or celiac sufferer! Yup, just like these delicious goodies, these are dairy and wheat free.
Divinely Dark Cookies
Makes about 10 BIG cookies
3/4 cup unsweetened cocoa powder
1/2 cup brown sugar, packed
1/2 cup confectioner's sugar
pinch salt
1 tbsp vanilla extract
4 large egg whites
- Preheat oven to 350F
- Whisk dry ingredients.
- With an electric mixer, combine vanilla and egg whites until very foamy.
- Add egg whites to cocoa mixture and beat with the mixer about 3 minutes, until glossy and well combined.
- Drop onto greased (or paper-lined) cookie sheets about 3 inches apart.
- Place in oven, reduce temperature to 325F.
- Bake 15-17 minutes, or until cracks begin to appear in the tops of the cookies.
- Cool completely on sheet.

Chewy and rich, these are decadently deep chocolate yummies! Sneaking even one after the kids are in bed may just lead to the absence of the rest of Santa's cookies on his goodie plate! Just make sure to refill it it before he shows up (haha), and if you need to find out where he is, NORAD has a great tracker our family's used for years!
