Crispy Chewy Chocolate Oatmeal Cookies
Makes 40
½ cup butter or non-hydrogenated margarine
2/3 cup brown sugar
¼ cup sugar
1 egg
1 tbsp honey
2 tbsp milk
1 tbsp vanilla
1 ¼ cups flour
3 tbsp unsweetened cocoa powder
1 teaspoon baking powder
½ tsp baking soda
½ tsp salt
1 ½ cups rolled oats
½ cup semisweet chocolate chips
½ cup Brown Rice Krispies or your favourite crisp brown rice cereal
- Preheat oven to 350 F.
- In a large bowl, cream together the margarine, brown sugars, egg, honey, milk and vanilla.
- Stir in the dry ingredients.
- Fold in the oats, chocolate chips and cereal.
- Drop by tablespoonfuls onto cookie sheets, leaving 2 inches between cookies.
- Bake for 8 to 10 minutes.
