Just a Salad...

Really, that's all this was. A salad. But... WHAT a salad!

I was getting bored with my lunches and tired of food in general yesterday... wait, can that ever happen to a real foodie?? Well, for me it did, and I wanted OUT of that rut ASAP! What's a girl to do with a rumbling tummy, a ticking clock and no inspiration for lunch? Well, she turns to the internet of course!

I took a recipe found (of all places) on the Splenda website for a noodle bowl, and swapped things around (I know I added shrimp, nixed the oil and subbed honey for the Splenda, but other than that... no clue!) and sat down to a satisfying and flavourful fresh tasting meal - which, unfortunately, sucks the big one when it comes to the photogenic department... sorry!

I'm going to keep playing around with these flavours, but for now, here's the unofficial "official" recipe, with my changes in red, going out to Ruth's Presto Pasta Night event!

Soba Ginger Salad
Serves 2
1 tablespoon grated ginger
3 tablespoons SPLENDA Granulated (1 tbsp honey)
1 tablespoon ketchup
1/4 cup low-sodium soy sauce (3 tbsp)
1/2 teaspoon chile garlic sauce (1 tsp)
2 tablespoons water (the original called for oil - same amount)
2 tablespoons lime juice (lemon, had no limes)
4 oz cooked and peeled shrimp (added)
2 oz dry soba noodles, cooked
2 cups mixed salad greens (more like 4)
  1. Place ginger, Splenda, ketchup, soy sauce, chili garlic sauce and water in a medium saucepan.
  2. Simmer for 1-2 minutes, and remove from heat.
  3. Add lime juice and mix well.
  4. Stir in shrimp and noodles, and chill if serving cold.
  5. Divide greens between 2 bowls, and top with noodle and shrimp mixture.
  6. Serve warm or cold.
