Duuude... Chill Man...

Well, that Hell's over for now! I finished my Nutrition midterm today, leaving me plenty of time to, well, study for next week's tests!

I told you yesterday that I baked up a storm during my stress-fest yesterday... these muffins are the second part of the sugar / carrot melee that I made! They're pretty standard, carrot and cinnamon flavoured muffins that are deliciously fluffy while being fairly low-fat... not dense at all! To be different ('cause I can!) I tossed in hulled hempseed instead of the more traditional chopped nuts or raisins, and made myself some mini muffins as well as a few biggies to take to class and pass around. It fits well with my college program that hemp seed contains all the essential amino and fatty acids we need everyday!

The gals at school, my profs (and the exxonites that got the leftovers!) all had rave reviews for them too! I love the smell they had coming out of the oven... and if it's any indication of the taste, these are pure gold!

Hippified Carrot Muffins
Makes 18
1 tbsp ground flaxseed
1/4 cup boiling water
200g whole wheat flour
100g flour
1/2 tbsp baking powder
1/2 tbsp cinnamon
1 tbsp vanilla
100 mL canola oil
100 mL skim milk
3/4 cup sugar
400g grated carrots
1/4 cup hulled hemp hearts
  1. Preheat oven to 400F, grease 18 muffin cups.
  2. Whisk together flaxseed and boiling water. Let stand 10 minutes.
  3. Whisk together the dry ingredients in a large bowl.
  4. In another bowl, beat together flax mixture, vanilla, oil, milk and sugar until well mixed.
  5. Beat into the dry ingredients.
  6. Fold in carrots and hemp hearts gently.
  7. Spoon into prepared cups.
  8. Bake 22 minutes, cool 10 minutes in tins and then turn out and cool completely on a rack.

  2. Guh. I want muffins. It's just "muffin weather" outside.

    But, I don't feel like going to the store, and I have nothing laying around that would make a good muffin. (I don't believe chocolate counts as a muffin... I need fruit.)

  3. Do you see a big difference in soaking the flaxseed meal in boiling water verses just warm? Does it get thicker?
